  • 2 large eggs
  • 3 very ripe bananas (mashed)
  • 1 tsp vanilla extract
  • ½ tsp teaspoon ground cinnamon
  • 100g dark chocolate chips (optional)
  • 100g chopped walnuts (optional)

Directions

  7. Bake for 55–65 minutes, or until a toothpick inserted in the centre comes out clean. Cover the top with foil if it starts to brown too quickly.

  • 150g caster sugar
  • 130g dark chocolate chips (optional)
  • 130g chopped nuts (optional)

Directions

  1. The process of making vegan banana bread is almost identical to the regular one. First, preheat the oven to 175°C, and grease the loaf pan before lining it with parchment paper.
  2. Mash the bananas in a bowl and add the wet ingredients (vanilla, canna-oil, plant-based milk, and sugar) before whisking together until well combined.
  3. Slowly mix the dry ingredients (flour, baking powder, baking soda, and cinnamon) until just incorporated. Carefully fold in the add-ins (such as chocolate or nuts), without overmixing.
  4. Bake for 50 minutes. Remove the loaf from the oven and let it rest for 10 minutes in the pan before transferring it to a wire rack to cool down completely.
